Kangaroo Island is the oldest bee sanctuary in the world and is home to the purest strain of Ligurian Bee. Flowering in spring and autumn, the distinctive red flowers are a source of food for many bird species. This is the first season that we have collected this honey, and it is one of our favourites.

Sweet tobacco, delicate spices including cinnamon & nutmeg dominate with a lingering sweet, smokey bourbon persistence. Perfect to bring depth and complexity to a simple dessert like cheesecake, or add a unique dimension to savoury dishes.
